Making a good football game is a huge task. Indeed, I think that making the necessary art for realistic players and jersies is much more than you could get help enough to do. It is much easier to find programmers who are willing to work on free software than artists. I think the only hope might be to reverse-engineer the data formats of Madden 2005 (or preferably, multiple versions of Madden) and focus on rendering these resources correctly, interpretting the player ratings, creating the necessary physics and collision systems, and finally, creating AI for both the players and the coaches. Doing these is an enormous undertaking, especially considering that it is unlikely that any of the participating programmers will have any experience programming sports games.

All of that said, I have been hoping that someone would attempt this, as Linux is sorely lacking in sports games and American Football is by far my favorite sport to play in real life and in video games and to watch. When I finish grad school this Spring and get settled into a new job, I might try to help out with the programming.
